This hands on Lamb Butchery Day is open to all, from complete beginers to smallholders and even chefs looking to add value to their products. This course is very popular and early booking is strongly advised.

Under the guidance of our butchery tutor you'll learn where the different cuts come from and how to break down the carcass.  Using various knife skills you'll be shown how to bone and roll joints to make showcasing cuts such as guard of honour and lamb cushion.  There'll be opportunity to practice butchers knots to refine presentation and hone your skills. Once the meat is cut up, it is processed into products such as Merguez sausages, lamb ham, and pate.

The course offers exceptional value as you get to pack up and take home all the meat you have butchered including your batch of sausages. 

There are just 4 butchery places available on this course, as well as 4 observer places.  The observers are a great way of having a friend or family member join you to help with packing or sausage mixing, or even as an extra pair of hands during the day.

With over 35 years butchery experience, David originally gained his craft from a third generation family master butcher in Sussex.  Since those early days David honed his skills further and over the years has worked in butchers shops and farm shops as well as assisting smallholders, chefs and meat producers.   Additionally, David is also an experienced beekeeper and produces his own honey most years.

His knack for explaining things in a real down to earth way has led him more recently to mentor young apprentices and he was also approached to be a butchery course assessor for an agricultural college.  He joins Empire Farm as a tutor directly from a biodynamic and organic farm in Sussex which has been featured on BBC Countryfile.  He has a passion for animal welfare and organically reared food and how this translates into the best quality produce for us all.
