Join Chef Fatima in preparing a wonderful Iranian meal for her online cookery class! She is a wonderful teacher, chef and story-teller. She will share the secrets to traditional Iranian dishes. This is your chance to learn a brand new cuisine, support an amazing cause, and eat great food.

The class will be conducted as an interactive virtual cook-along. The classes usually range from 1-2 hours long. The chef will lead the group step by step through the recipes; stopping frequently to answer questions, share anecdotes, and provide feedback on your dishes!

Before the class we will send you a list of ingredients, quantities and equipment so you can join ready to learn! Please read this carefully as there may be some recipes you need to prepare before the class. We will also send you a reminder email 3 days before the class takes place that will include the Zoom link, titled "Your upcoming online Migrateful Class". You can also find the Zoom link on the Online Event Page, accessible through the link included in the Eventbrite reminder email.

Chef Fatima’s cook-along dishes will be Baghali Polo (Rice with broad beans and saffron chicken) & Mast o Khiar (Yoghurt and cucumber).

Allergens include: Milk, Tree Nuts (Walnuts). 

Equipment needed

  • Jam jar or mug
  • Mortar and pestle or rolling pin and mug
  • Kettle
  • 1 medium bowl
  • Sieve
  • Measuring spoons
  • 1 medium bowls 
  • 2 small bowls
  • 1 deep non-stick frying pan with lid
  • 1 Chef’s Knife 
  • 2  chopping boards (veg and meat)
  • 1 wooden spoon 
  • 1 pair tongs/fork 
  • 1 tablespoon
  • 1 medium non-stick saucepan + lid  (line with baking paper if not non-stick)
  • 1 peeler 
  • 1 coarse grater
  • Kitchen towel
  • Serving plate

Ingredients

* 2 chicken legs, skinless, bone-in

* 1 large white onion

* 2 small carrots

* 1 medium potato

* 1 cucumber or 8 baby cucumbers

* 2 large garlic cloves

* 10g fresh mint (or 1 tsp dried mint)

* 130g frozen broad beans (or peas)

* 230g basmati rice

* 135ml (9tbsp) sunflower oil 

* 7 walnut halves

* 300g greek yoghurt (or plant-based yoghurt)

* ½ tbsp butter

* ¼ tsp saffron 

* ¼ tsp turmeric

* ½ tsp ground black pepper 

* 20g dried dill (or 100g fresh dill)

* 1 ½  tbsp + 1 tsp salt 

Message from Fatima:

“My name is Fatima and I am from Iran. I came to England in 2022 with my husband and my six year old twin boys. We left everything behind in Tehran to come here.

In Iran, I studied food science at university and worked for a medical company and then became a nail technician.

I didn’t start seriously cooking until I got married. It was then that I fell in love with cooking. I love experimenting with food. My favourite ingredient is saffron - I use it in lots of dishes - rice, ice cream, cake, sweets and even tea!

I love the diversity of Iranian food - every city has its own local dishes. In the north, we grow a lot of rice, so you’ll find this on every menu. In the south, seafood and spices feature. Meat and chicken are popular everywhere.

By sharing these dishes, I hope to recreate fond memories I have of Iranian food and culture. Iranian people are very hospitable. I’m happy to welcome you to my class, to give you a taste of the country and people.”

Please note that we only process refunds and ticket transfers if we are notified 7 days before the class takes place. No changes are allowed if the class is missed. When you register for this event, you are agreeing to our Terms and Conditions. If you are not able to attend the class, you can pass on your tickets so someone else can attend on your behalf.

We require a minimum of 6 participants to run this class and reserve the right to cancel it due to insufficient enrolment. If this occurs, we will, at your convenience, transfer you to another class of your choice of the same value. If this option does not suit you, you will have the choice to receive either a gift voucher for the class or a full refund. In the case of insufficient enrollment, we will inform you at least 6 days before the class.

What to expect

During a Migrateful cookery classes you will work within your group to prepare dishes to be served family-style. Some dishes are prepared by the chef and demonstrated to you while some dishes will have you preparing it from beginning to end, while learning our chef’s authentic techniques from their home country. Our classes appeal to those interested in learning international recipes, practising a different language and in meeting new people for a cultural exchange in an intimate home setting, as well as to those wishing to support migrants and refugees struggling to rebuild their lives.
